ディエゴは、コロンビア屈指のコーヒー産地として知られるウィラ県サンタ・マリアで活動する生産者です 。
彼はコーヒー 農家の家系に生まれ、両親から栽培の技術と価値観を学びました 。現在は、自身を育んだこの豊かな土地で2人の子供を育てながら、家族の遺産を守り続けています。
この地域は年間平均気温が18°Cと安定しており、ネバド・デル・ウィラ火山の恩恵を受けた肥沃な土壌が広がっています 。標高1,400〜2,100mという環境は、コーヒーに際立った個性と複雑さをもたらします。

彼の仕事は、代々受け継がれてきた献身的な姿勢と、地域のコーヒーの価値を未来へ繋ごうとする前向きなアプロ ーチの両方を反映しています。
サンタ・マリアでは近年、生産者同士の結びつきが強まっています 。多くの小規模農家(中には世帯主である女性たちも多く含まれます)がネットワークを形成し、知識を共有しながら品質向上とレジリエンス(回復力) を高め合っています 。


完熟したチェリーのみを丁寧に手摘みで収穫しています。
果肉除去後に発酵槽で36時間発酵させることで、この豆特有の際立った風味とアロマを醸成させています。乾燥では温室(室内)5日間程度行います。天候に左右されず、ピンクブルボ ン特有の繊細な風味を最大限に引き出しています。


フローラルでありながら、桃やオレンジのジューシーな甘酸っぱさが特徴的なコーヒーです。
溢れ出すような果実感を思う存分楽しめるよう、明るい酸味を保って焙煎しました。
